Red Potato Colcannon

IMG_2556Happy St Patricks Day!!!! As a kid, St Patricks day always meant green milk, green eggs, and those nasty gold foil covered chocolate coins. (you know, from the pot of gold) Not to mention all the leprechaun hunting and  pinching.  In my family, if you were unlucky enough to forget to wear green, you ended up as a walking target. It all started out nice an innocent, a pinch here or there, but by the end of the day, someone would end up pinching a little to hard or maybe just one too many times and the game would go from pinches to punches.   

Ahh, memories. 

Now as an adult (kinda adult) St Patricks is celebrated a little differently. The little ones in the family still get their green milk (which they are told is leprechaun pee) and those nasty gold coins, but I think the pinching has stopped.( a great tradition lost)  I myself don't have any littles at home so no little leprechaun games or gross dyed food for me.  Nope, in my house we celebrate with a few beers and a more traditional irish dish, Colcannon. Mashed up potatoes with cabbage and kale… I mean, can it get much better? It can when you use red potatoes and red cabbage. Not only is it so tasty tasty, but it is so pretty pretty. No need for green milk or nasty candy. 

But I still make sure to wear green and you might find me doling out a pinch or two. 

IMG_2458  The stuff…. Super pretty red potatoes, red cabbage, shallots, kale, salt and pepper, and olive oil.

Note. If you do not have or want to use red potatoes, russet or white will work, it just won't be as pretty. 

IMG_2459   IMG_2473Dice up the pretty potatoes and stick them into a pot and fill up with water and add in a good tablespoon of salt.  Stick on high heat and bring to a boil, then turn the heat down to medium  and cook those taters until super fork tender. (bring them to the edge of falling apart)

While the potatoes are boiling, chop up the cabbage, shallots, and the kale and stick into a big skillet with a good drizzle of olive oil. Sauté on medium heat until soft and tender.

IMG_2535Once the potatoes are super tender, drain the water and dump them into the pan with the sautéed veggies. With a potato masher or a fork, mash up the potatoes and mix in the veggies, adding a drizzle or more of olive oil as you go. (Start with a drizzle and work your way up until it tastes good to you) Salt and pepper to  taste. 

IMG_2568The most pretty pan of smashed up potatoes that I have ever seen. Eat as a side dish or even a light main dish. Fork is a good utensil to use, but I found that my fingers worked just as well.

Red Potato Colcannon

  • 5-10 Red potatoes Red Potatoes depending on the size (about 3 1/2 - 4 chops chopped)
  • 1 Cup Chopped Red or Green Cabbage
  • 1 Cup Chopped Kale
  • 1-2 Shallots
  • Olive Oil
  • Salt and Pepper

Rinse and dice potatoes and place into big pot. Cover potatoes with water and add about a tablespoon of salt. Place on high high heat and bring to a boil. Turn heat to medium low and let potatoes cook until super fork tender. While potatoes are boiling, chop up cabbage, shallots and kale and sauté in a large cast iron skillet (or any skillet) with a good drizzle of olive oil.  Once the potatoes are done, drain water and add potatoes to the skillet with the sautéed veggies. With a potato masher or fork, mash the potatoes and mix with the veggies, adding a drizzle or two (depending on your taste) of olive oil as you go. Salt and pepper to taste.

Serve from skillet or dump into a fancy dish with a big spoon.

Eat as a main dish or as a side….Good hot, warm and cold.

Irish Soda Bread

IMG_1945  There is irish soda bread in your future. I can see it. A nice hardy hunk slathered in butter and honey, crumbs all over the place.  So all you have to do know is make it. 

I remember reading somewhere (I wish I could remember where) that irish soda bread is just four ingredients, flour, sea salt, baking soda and buttermilk and adding  anything else would make  it a cake. So when I decided to make irish soda bread, thats all I used. ( I made it with some wheat flour) What you end up with is a highly dense, super fragrant, soft, chewy bread with a crunchy crust. Definitely not a cake.

Note….You can for sure add in a bit of sweetener or even little fat to make it richer and softer, but then it wouldn't be bread (or so that's what I read) There are tons of other recipes out there that have other stuff in them. This is just a really simple basic recipe. 

IMG_1828White whole wheat flour and all purpose flour mixed together. Salt baking soda and buttermilk. That's it.IMG_1840All the dry whisked together and in goes the buttermilk. Mix together until dough starts to form then dump onto a floured surface.  Handling dough as little as possible, knead into ball.

IMG_1857Place on a baking sheet and dust with flour. Take a sharp knife and cut  an X through the top about 1/2 inch deep.

Stick in into the oven for 50 ish minutes, or unit la tester stuck into the middle comes out clean and there is kind of a hollow thunk when tapped on. IMG_1956

And now you have a very pretty, dense hunk of irish soda bread. 

Cut and serve with butter and honey (thats how the mister likes it) or whatever you want to eat it with.

Irish Soda Bread

  • 1 cup all purpose flour 
  • 1 cup white whole wheat flour (or you can use all purpose) 
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk (or your choice if milk plus a tablespoon lemon juice) 

Preheat oven to 375

In a large bowl, whisk together flours, baking soda and salt. Mix in buttermilk until the dough starts to come together. If the dough seems to dry, add another splash or two of milk. Dump out dough onto a floured surface and shape into a ball. transfer onto a baking sheet, dust with flour and cut a x about 1/2 inch into the top. Stick into oven for 50 minutes until a toothpick comes out clean and the bread makes a hollow sound when tapped.

Let cool enough to handle.

Cut into and serve with a smear of whatever you want

Best eaten within a day or two

Lemony Garlic Lentils

Yay Tuesday! Which means its lentil day in my house. Ok not really, because everyday is lentil day in my house. Why? Because they are pretty much the best.  And with the addition of lots of garlic and lemon…..whoa nelly!!! Eat your heart out.But for serious, not only are these little bits of happy legumes oh so tasty, they also are a nutritional whomper.  So much protein, iron and zinc, magnesium and a bunch of other good stuff. Low in calorie and fat. Shelf stable, cheap, and fast and easy to cook. They are fantastic in soups, sauces, casseroles and salads. Eat them warm, cold, plain or covered in mustard. There possibilities with these little guys are endless. If you do not have lentils in your pantry right now, you are crazy. Make it  priority to get some. Do it today, and make these fantastically yummy lentils for dinner. Trust, you won't be sorry.

Lentils, water (not shown but I think you know what it looks like) lemon, garlic, and some salt and pepper. Cabbage and kale to make it that much better.

Add a cup of lentils to a pot with minced or pressed garlic, the zest of the lemon and the juice of half the lemon. (save the other half to squeeze on top later) Add in 2 1/4 cups water , a sprinkle of salt and pepper, and bring to a boil. Place a lid on pot and turn heat down to low. Let cook for about 15 - 20 minutes or until lentils are just about done.

Now top the almost done lentils with  the cabbage and the kale. Add a splash of water and a pinch of salt  and replace lid. Keep pot on simmer for another 5-8 minutes until the veggies are wilted.  This gives you a slightly cooked, but still nice and crisp veggie. If you like you veggies a bit more soft, just add them into the lentils a little earlier or don't even cook them at all. It's whatever you want.

After a few minutes take the lid off and…aahh. Smells like cozy lemony garlicy happiness.

 A big steaming bowl of everything that is good. Serve with an extra wedge of lemon to squeeze on top!

Lemony Garlic Lentils 

  • 1 cup dry lentils
  • 2 1/4 cups water
  • 4-5 cloves garlic
  • 1 lemon (juice and zest)
  • Salt and pepper
  • some shredded cabbage
  • a few kale leaves

Add water, lentils, the zest and juice of 1 lemon and about a teaspoon of salt and pepper to a pot. Mince garlic and add that in too.  Bring to a boil then place a lid on it and turn down to simmer. After about 15 minutes, give lentils a stir. At this point the lentils should be a al denta, but just about done.( If you notice the lentils seem dry, just add a bit more water) Layer on the cabbage and kale, adding in a splashof water. Replace lid and let simmer of another 5-8 , or until lentils are cooked and the veggies are you cooked to your liking. 

 

Turmeric Ginger Carrot Soup

IMG_8806There is a joke about Vermonters, that all we talk about is the weather. Well, it's kind of true. But to our defense, we get a lot of weather, and it's always changing and intense and both lovely and crazy and all over. So yeah, we talk. A lot, about the weather. And on that topic, I am trying so hard not to complain, but honestly, I am getting a little sick, both physically and mentally from all of these  super, to freaking cold temperatures. Yesterday the high was 0 ( which was at like 2 in the morning)  and factor in the windchill, the temp stayed at like 25 below. It f**king sucks. I can't  stay outside for too long or else I will probably die. The dog  is having a hard time making it around the block before he gets ice paws, and the mister, well he even started wearing gloves (he wears a sweater all winter and never gets cold…..he is officially cold)

 And not only is the cold keeping us all indoors, but its making us all borderline sick. We both have been fighting something for the past few week. The headaches, stuffy nose, chest congestions. The puppy is getting super dry skin and gave himself a hot spot. BLAh!! Ok, enough! No more complaining

Because  I do really love the winter and all the pretty snow!!!!

But we are feeling kind of sick so to make us feel oh so much better, a fantastic, super tasty, healing, good for me, good for you, soup. Turmeric ginger carrot… oh man. Made with lots of ginger, turmeric and garlic and finished with a drizzle of raw honey. This soup is exactly what we need. All ingredients scream.. FEEL GOOD, BE WARM AND COZY! Almost everything in it has antibacterial and anti inflammatory properties. The veggies are hearty and heathy and just eating soup helps to keep hydrated. And the best part..it tastes so freaking amazing. 

So whether  you are feeling a little mah, or just a little hungry.…this soup is where it's at!

Lots of chopped up carrots, a small onion, a little bit of cauliflower I had left over and a small beet. If you don't have the cauliflower and or a beet, just use  ares pepper or another 2 carrots.. no biggy. 

Then we have the fresh ginger ( you can use powdered) turmeric and garlic.  All the good healthy spicy and yummy stuff. 

IMG_8747I accidentally spilled the turmeric on the counter..but it kind of looks like I might have done it on purpose… yeah, let's go with that.  Chop the garlic and he ginger into    chunksIMG_8761And toss into the pot to warm and activate. Just a little toasty toast. 

IMG_8765And the veggies are roasted and tender and smell so good.  It took a lot of will power to not eat the whole pan right there.

IMG_8798I added the roasted veggies and 3 cups water straight into my pot  with the spices because I used an emulsion blender. If you are using normal blender, add the veggies, the toasted spices and the water to the blender and blend until smooth. Then transfer to a pot.

IMG_8832Pretty much all blended together….(I left a few big chunks in there to snack on while I was waiting to eat serve…I was really hungry) and let to simmer for a little longer...

And now ladle into a bowl and get ready for a fantastic finish… drizzle a spoonful of raw honey into soup…….so so good. You could add the honey before serving, but heating it kills all the good antibacterial stuff so that's why we wait. Then  I sprinkle some chopped kale and chives. (do it if you want, but not necessary)

Now enjoy. Let the warmth wash over you and feel all those good spices helping to fight the good fight to keep you well and all the yummy to satisfy your hunger.

And lets hope for some warm (above 0!!) weather!

Turmeric Ginger Carrot Soup

Ingredients

  • 5 large carrots
  • 1 small onion
  • 1 small beet*
  • quarter head cabbage ( or a cup of frozen)*
  • 2-3 teaspoons  turmeric 
  • 2-3 tablespoons fresh  ginger (1/2 teaspoon if using powdered)
  • 4-6 cloves garlic
  • salt pepper
  • raw honey (omit if vegan)

* If you don't have or want to use beet and or the cauliflower, you can use a red pepper, a small sweet potato, or just use a few more carrots. 

Chop all veggies into similar sized chunks and toss into a lightly oiled pan or on a baking sheet and sprinkle with salt.  Stick in oven at 425 for about 30 minutes or until all veggies are fork tender. 

In a large soup pot or dutch oven, toss chopped garlic, ginger and the turmeric and place on medium heat for a few minutes to activate the spices. Add the roasted veggies and 3 cups water to pot (if using emulsion blender) and blend until smooth. If using a blender, add the toasted spices, roasted veggie and 3 cups water and blend until smooth then transfer to a large pot or dutch oven. Add salt and pepper to taste. Turn heat down to  simmer and let cook for an addition 10 minutes. 

When ready to serve, ladle soup into bowl and drizzle a spoonful of raw honey into soup. Garnish with fresh chopped kale, chives, cabbage or whatever you want. (or nothing is good too)

Citrus Avocado Salad

 IMG_6040 Whenever me and the mister get invited / show up for dinner at someone's house, I like to bring at least one thing to contribute to the meal. First, because I am nice like that. Secondly, because I get to make food for other people besides Nick and get new feedback on recipes. (Sometimes I think he tells me things taste amazing when they might not) And thirdly, its nice to mess up someone else's kitchen besides my own. So last night we went to my sisters and  I made a salad.  A very easy and virtually mess free salad…….I still made a mess (I cleaned it up myself!)

 The salad I made was a light, crisp, and citrusy thing of beauty. Not exactly what one would think to eat on a freezing my face off cold day, but hey, you can't help what the body craves. Plus, if you  make it for. lets say, a sister that is making french fries and hamburgers for dinner..then a light and citusy salad is just what you need. Feedback from the mouths that ate it….Fanstastic combo! Best Salad ever! Never going to eat anything else! Ok, not so dramatic, but this was a winner. And for real, this salad takes about five seconds to compile and all the ingredients are really accessible right now so really, why not?

 Nice crisp  kale. Thinly slices red onion for a nice bite. Orange for that sweet citrusy and juicy smack and avocado to add a perfect creamy finish. Lime to make it perfect. IMG_6026 Start with the  base layer of kale… then first goes the sliced onion. (Make sure it's thinly sliced or else it will be to overpowering)IMG_6034  Add thinly sliced oranges…oh boy, your half way there!!!

IMG_6039Top with thinly sliced avocado, a sprinkle of salt and drizzle with lime juice. I also served with an extra wedge of lime, there is never too much lime.

Now you can stand back, take a picture, send to all your friends and make them jealous of you fantastically pretty and oh so delicious salad. Citrus Avocado Salad (Makes 2)

Ingredients

  • A few good handfuls of kale leaves
  • 1 orange
  • 1 avocado
  • 1 lime
  • 1/2 a red onion

Remove tough stems from kale and chop leaves into small month sized pieces. Thinly slice  onion, peel and thinly slice orange and cut avocado into…yup you got it, thin slices. 

Kale into bowls, top with  onion, orange and avocado. Top with the juice of half a lime…Add a sprinkle of salt.
