Black Bean Soup with Cornbread Dumplings

Black beans soup is eaten on the regular around here. Not always the same way but pretty much. Why screw with a good thing you know?

Now soup with dumplings. This is not (yet) a regular thing but I was making the usual blacken soup and planing on making corn bread to go with (in a pan) , when I had a moment of clarity and realized that I should just make the corn bread into dumplings and not have to deal with baking and another pan to clean. Duh. Why don’t I do this more often?

And that is it. A black bean soup, nice and thick, with light fluffy cornbread dumplings cooked in one pot. Quick, easy and all sorts of delicious. Can’t complain about that.

Now let’s get to the soup and dumplings!

The stuff. For the soup there are bLackbeans, and onion, spices, a carrot, garlic, tomato paste, apple cider vinegar. For dumplings we have flour, baking powder, salt, oil, and plant milk. Salt and pepper too.

Start by dicing up the carrot and onion and mincing the garlic.

Dump all that you diced into a big pot, along with the spices, some salt and pepper, and about 1/2 cup of water. Place on stove and cook down on medium heat until the onion is becoming translucent and the whole pot is starting to smell fragrant.

Now add in beans and tomato paste and about 5 cups of water. Bring to a boil then turn down to medium an cook for about 20-30 minutes.

Soup. Cooked and all taste but one more little step.

Remove a third of the soup and blend until smooth and then add it back it.

Dumplings. Mix dry together then add in oil and milk. Mix together unit incorporated.

While soup is still on medium heat, scoop the dumping mixture right into the soup.

Place a loose side on top of pot ans let the dumplings cook util list and fluffy which will take about 15-20 minutes.

Then you eat it. Add some avocado on top of you want. Avocado is always a good idea.

Black Bean Soup with Cornbread Dumplings

feeds 3-4

  • 3 cups cooked black beans (or 2 16 oz cans)

  • 1 large onion

  • 1 good sized carrot

  • 3-4 cloves garlic

  • 1 teaspoon chill powder

  • 1 tablespoon cumin

  • 1/2 teaspoon red pepper flakes (or none if you don’t like the spice)

  • 1 tablespoon maple cider vineger

  • 1/3 cup tomato paste

  • 5 cups water

  • salt and pepper

    Dumplings

  • 3/4 cup all purpose flour

  • 1/4 cup corn meal

  • 3/4 cup plant milk

  • 2 tablespoon neutral oil

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

Start by dicing up the carrot and onion into small pieces. Mince the garlic and then place the garlic, onion, and carrot into a large pot with the cumin, chili powder, and red pepper flakes, a good pinch of salt and pepper, and about 1/2 a cup of water. Place pot on stove on a medium low heat and sweat the mixture for about 10-15 minutes or until fragrant and the onions are slightly translucent.

Add in the tomato paste, beans , and 5 cups water. Bring to a boil then reduce to medium heat and let cook for about1/2 hour. Once soup has cooked down a bit and tastes delicious, remove form heat and carefully transfer 1/3 of the soup to a blender or jar (if using a hand blander) and blend until smooth. Add the blend soup back to the pot and turn the heat back on to medium low. Taste and add more salt and pepper if needed.

Now make dumpling mixture. Mix the dry ingredients together in a bowl then add in the oil and milk and mix until incorporated. Scoops the dumping mixture into the soup while the soup then place a lid loosely on the pot. Cook for another 15-20 minutes or unit the dumplings are nice a n fluffy.

And when they are done, remove lid, tun the heat off, and paddle soup and dumplings into bowl. Eat. Add sliced avocado for a little more yum.

Pear Cobbler

My neighbor has a couple pear trees and every year, for a few weeks in August, every time I pass his house (I walk by it like 5 times a day) he jumps out at me asking if want some pears. I always say yes, even if it is just one or two. How can I pass up free pears?

The last batch of pears I got from him were a little on the meh side, like at the point were you wouldn’t really enjoy eating them raw but are still good for baking which is fine by me and the reason I made a cobbler. Well that and the mr asked me to. (#1 girlfriend here!)

So here is it. A pretty basic pear cobbler which is to say a pretty fantastic pear cobbler. It is like a pear pie but with a biscuity top instead of a pie crust. And thats it, nothing fancy, just straight up pear goodness.

You know you want it so just make it.

Now to the cobbler.

The stuff. Pears, flour, sugar, baking powder, salt, plant milk, oil, noise sugar, cinnamon and alittle more flour, apple cider vinegar, and little plant butter.

clean, core, and slice up pears.not to small and roughly the same size.

Butter a baking, dump in the pears and toss with sugar, cinnamon, and a little flour. Place in oven while preheating to start the pears cooking.

Now biscuits. Mix all the dry together then add in the oil and milk, Gently fold just until the wet and dry are incorporated . Place mixture in fridge while pears cook.

Once the oven is preheated and the pears have had a time to cook a bit, grab the cold biscuit dough from fridge and carefully grab the pears from the oven.

Drop biscuit dough on top of the hot pears, sprinkle with the raw sugar, and pop it the whole shebang back into the oven for another half hour or so.

Pear Cobbler

serves 6ish people

For filling

  • 4 large or 6-7 smaller pears

  • 1/4 cup brown sugar

  • 1 1/2 teaspoon cinnamon

  • pinch salt

  • 2 teaspoons flour

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon vegan butter (to grease pan)

    for biscuits

  • 1 3/4 cups all purpose flour

  • 2 teaspoon baking powder

  • 3 tablespoons white sugar

  • 1/2 teaspoon salt

  • 1/3 cup neutral oil (or olive if you want)

  • 2/3 cup of plant milk

  • 1 tablespoon raw sugar

Clea, core and slice up pears. Grease a square ( 8x8 or a little larger) baking pan with the butter and dump the pears in. Add the vinegar , brown sugar, 2 teaspoons flor, and the cinnamon into the pan and toss around until the pears all all coated. Place the pan into the oven and start to preheat to 425 degrees.

Once pears are in oven, make biscuits. Mix all the dry together then add in the oil and milk. Gently fold the wet with dry just until incorporated (don’t over mix or they will be tough). Place dough in fridge,

One oven is preheated, let pears cook for about another 8ish minutes the carefully remove pan from oven. Grab biscuit dough from fridge and carefully drop clumps of dough on top of hot pears. Sprinkle with the raw sugar n then pop pan back into oven, redoing heat to 400.

Bake for 30-35 minutes or until biscuits are a nice deep golden brown.

Remove from oven, let cool far a few minutes, then dig in.

Left overs can be stored in the fridge, covered, for a few days and eaten cold or reheated.

Peach Shortcake

My fruit bowl went from the odd apple and lots of oranges to an overflow of peaches cause its summertime fruit time!

I might have gone a little overboard with the first purchase of peaches and bought like 12 lbs. (Yeah I did). But I knew I wanted to make these shortcakes for the mr and Barb so I figured there is a couple pounds right there that are not going into my mouth so It was like I bought 10 lbs and I can eat 10 lbs of peaches in a week no problem. Facts!

It was weird, I don’t usually plan to far in advances on what I am going to bake but for some reason I had it in my head that I needed to make shortcakes with peaches. Everyone is always making strawberry shortcakes but then stops it there and I don’t know, it just seems like the world needs to expand their fruit and shortcake minds and mix it up. Yes strawberries are fantastic but so is all the other fruit out there. Especially peaches. Peaches are a good fruit to start mixing it up with.

See, I got you. Now to the peach shortcake!

The stuff. Flour baking powder, salt, sugar, coconut oil, plant milk, a can of coconut milk, powder sugar, and ripe peaches.

Start by cutting up peaches. Remove pits and dice small. You can peel them but why?

Place diced peaches into a bowl and toss with a little sugar. Set aside.

Make the biscuits. Toss all the dry together then cut in the very cold coconut oil. You want to have grainy, small little chunks of oil. Next add in the very cold milk and gently fold in with a fork until is is absorbed be gentle to not over mix..

Dump the shaggy dough onto a lighhy scoured counter and gather together.

roll dough out into a shape that is about 1 1/2 inches thick (I went with rectangle) and cut into 6-8 equal sized pieces.

Place cut biscuits on a lined baking sheet, brush tops with a little milk, and sprinkle the tops with a bit of sugar.

Pop into the oven to bake. 20-25 minute unlit golden brown.

And last buy not least, the coconut whipped cream. Take the can of coconut milk from fridge and scoop our the thick cream part. Place into a cold bowl and beat until thick and creamy. Beat in a teaspoon or so of powered sugar if you want a little sweetness.

And then you add it all together. Cut a biscuit in half. scoop on some juicy sweet peaches, then top with a plop of coconut cream.

Summertime in the mouth.


Peach Shortcake

make 6-8 shortcakes

  • 2 cups flour

  • 1/2 cup very cold coconut oil

  • 1 teaspoon salt

  • 1 tablespoon baking powder

  • 1 tablespoon sugar

  • 1 cup very cold plant based milk

  • 5-6 fresh ripe peaches

  • 1-2 tablespoon sugar for peaches (greater amount for sweeter peaches)

  • 1 can full fat coconut milk chilled for 24 hours

  • 1 teaspoon powdered sugar whipped coconut cream (optional)

Start buy cutting up peaches. Remove pits,(peel them if you must) ,and dice into small pieces. Place into a bowl and toss with a tablespoon or so of sugar. Set aside.

Preheat oven to 400

Now for the biscuits. Place flour, baking powder, 1 tablespoon sugar, and salt into a bowl. Mix until incorporated. Add in the very cold coconut oil and cut in with a fork or pastry cutter until the mixture is crumbly but the oil is NOT completely in mixed in. You want the little chunks of oil. Next dump in the very cold milk. Gently mix with a fork unil all the liquid is absorbed and a shaggy dough has formed. Dump dough onto a lightly floured surface and gather together. Pat flat with hands into a rectangle that is about 1 1/2 inches thick ten cut into 6-8 equal sized pieces. Place onto a line baking sheet, brush tops with a little milk and sprinkle with a bit of sugar. Pop into hot oven and bake for 20-25 minutes or until a nice golden brown on top and bottom. Remove form oven and let cool on a wire rack.

For coconut cream. Remove canned coconut milk from fridge, open it and scoop to the top layer of thick coconut cream. Place into a cold bowl and whip with a beater or by hand until thick. If you want to add a little sugar, beat in a teaspoon or so of powdered sugar.

To assemble. Grab a biscuit, cut in half and place on plate or in bowl. Scoop on some peaches and then add a plop of whipped coconut cream. Grab a eating utensil (spoon or fork, you do you) and eat.

Johnny Cakes (AKA Cornmeal Pancakes)

Recently I went through my pantry, did an inventory of what I have, what I am out of, and what needs to be used up.

This is a reminder that we all should be doing this, especially now if you are a cold weather/holiday cook and or baker. Get a head start, make sure you can find flour and sugar, and make sure your baking powder and sodas are active!

My pantry is pretty freaking well stocked if I do say so myself. One thing I like to do though is use up ingredients that are not super staples (like cornmeal) before I buy more. And I was low on cornmeal so I figured I would just use the rest up for dinner and pick up a fresh bag during the next grocery shop. I was planning on making a pan of baked cornbread but time got away from me and it was too close to dinnertime for me to bake. So I grabbed a skillet and made cornmeal pancakes instead.

Just as good, if not better (I would say better) then cornbread. Crispy, soft, rounds of perfection. Eaten by the mr who claims he doesn't like cornbread( he really liked these🤷‍♀️) and took all of 8 minutes from start to finish for dinner. And now I will probably be making these way more often now because these little pancakes are perfect for serving with soup and chili. And I did get a fresh bag of cornmeal so I am all good to go!

To the cornmeal pancakes.

The stuff. Cornmeal, white whole wheat flour, salt, baking powder, honey or maple, olive oil, and boiling water.

Simple here. Cornmeal, honey or maple, and oil into a bowl. Mix in hot water until completely incorporated. Let sit for a minute or two then add in the flour salt ,and baking powder. Mix til combined.

Batter into a hot skillet to cook, just like you would expect. Each side cooked until golden brown.

Place them on a wire rack instead of a plate as you make them, if you care about keeping them crispy.

Then you eat them. Anyway you like. You can go the sweeter route and pour some maple on a stack or smear some jam on top. Or savory like I did here, topped with tomato stewed chick peas and avocado mousse. OR just eat them straight up hot, warm, or cold.

They are good all the ways.

Johnny Cakes (AKA Cornmeal Pancakes)

makes 8-10 pancakes

  • 3/4 cup cornmeal

  • 1/4 white whole wheat flour

  • 1/2 teaspoon salt

  • 1 teaspoon baking powder

  • 1 teaspoon honey or maple syrup

  • 2 tablespoons oil plus more for skillet

  • 1 cup boiling water

Place the corneal, honey or maple, and oil into a medium sized mixing bowl. Dump in the boiling water and stir until everything is combined. Let sit for 2 minutes. Add in the baking powder, salt, and flour and mix install incorporated.

Grab a skillet and heat to medium on stove.

Once skillet is hot, add a touch of oil to evenly coat the bottom. Scoop batter into pan with a spoon and spread into a round that is no thicker then 1/2 inch. Cook for 3-4 minutes of until the bottom is golden brown. Flip and cook other side until golden brown. Place cooked cakes on a wire rake to keep crispy.

Eat right away, sweet of savory or plain as they are. Left overs are great, just place them in an airtight container for up to 4 days. Can be reheated to crispy perfection in the oven or in a toaster!

Baked Polenta with Black Beans and Fixins

I know that everyone in the world right now is making bread. And that is great, that is awesome, and I am (although I always have been) one of those people making bread. But I was thinking about all those that are not bread eaters, or people that can’t find a freaking bag of flour because the world has gone crazy and all we do now is bake. Well I got you. Polenta friends. Basically all you need for polenta is cornmeal and water and you are good to go. No flour needed.

This polenta situation is a little more then just make polenta and eat. No, it has been cooled, seared, baked, then topped with basically anything you would throw into a burrito because why the heck not. And really, that is what you really should do with polenta because it is like a big crispy, yet soft and creamy corn tortilla (I know right.) Plus you can show pictures to all of your friends of this amazing meal you whipped up and made look all nicey nice and shit. You will say “What bread, no, you should see this polenta!” And then soon after the internet will be ablaze with polenta cakes with beans. Seriously. It’s gonna happen., and think, it could be you who makes it so. Haha!

To the polenta a fixins!

The stuff. Cornemal, water, salt and pepper, cumin, and olive oil. Then fixing of cooked black beans, salsa, some shredded cabbage, 1/2 a big onion, avocado, a lime, and some pickled jalapeño.

Note that you can use all these fixings or none of these. Use what you have!

The polenta. First off, you need to make this at least an hour before you start to bake it because it needs time to set so factor that into your time.

To make polenta, water goes into a big pot and placed on stove to boil. Once water is boiling, slowly pour cornmeal into water while continuously whisking. Once all in, turn heat to medium low and keep whisking, for about 15 minute, until polenta is nice and thick and creamy. Remove from heat, dump in cumin and olive oil, mix and mix until incorporated.

Quickly pour polenta into an oiled baking pan and pop that pan into the fridge for the polenta to set.

In the meantime, slice and dice up onion and toss it around with cabbage, a pinch of salt, and juice of lime.

Once polenta is set, turn it out of pan onto a cutting board. Cut into 4-6 equal sized pieces.

Another note. You can for sure only cook a serving or two and save some for a later time. Just place unbaked polenta in a airtight container and it should be good in fridge for up to a week.

Sear polena. Get a skillet oiled and nice and hot and cook each side for about 5 minutes or until golden crispy. Then either place on a baking sheet or keep in skillet if it’s oven safe and pop into oven to bake for about 1/2 and hour.

Done polenta. DONE!

Now for the fixins. I won’t go to into details, I trust you know what to do.

Baked Polenta with Black Beans and Fixins

serves 4-6

For the polenta

  • 1 cup cornmeal

  • 4 cups water

  • 2 tablespoons olive oil

  • salt and pepper

  • 1 tablespoon cumin

FIxins

  • 3 cups cooked black beans (about a 3/4 cup per serving )

  • 3 cups shredded cabbage

  • 1 small or 1/2 a large red onion

  • A lime

  • Salsa

  • An avocado

  • fresh or pickled jalapeño

  • And anything else you want (Greens, cheese, yogurt, sour cream…. )

Start off by making polenta. Add water ro a medium sized pot and bring to a boil. Once boiling, grab a whisk and the cornmeal and slowly add cornmeal into water while whisking. Once all cornmeal is in, turn heat to low and pretty much continuously whisk for about 15 minutes. Careful to really whisk all around the bottom of the pot so you don’t burn the bottom of pot. Once the polenta is nice and thick and creamy, remove from heat and dump in the cumin, a good pinch of salt and pepper, and oil olive. Mix until completely incorporated then pour mixture into a oiled 9x9 or 10x10 baking pan. Place pan in fridge to let the polenta to set, which should take about an hour but can stay all day if you want.

In the meantime, slice onion up and place into a bowl with shredded cabbage. Add juice of 1/2 the lime and a pinch of salt and toss. Set aside.

Once polenta has set, preheat oven to 400.

Take pan and invert it onto a cutting board then cut into 4-6 equal sized pieces (any size and or shape works). Grab a skillet and drizzle a in a little oil. Get it nice and hot on the stove then sear the polenta, both sides for about 5 minutes or until nice and crispy. Once the polenta is seared, place either on a baking sheet or keep in the skillet (if it is oven safe) and place in oven to bake for about 1/2 or until nice and firm and crispy. Warm up the black beans while you are waiting.

When the polenta is baked to your liking, remove from oven and place on plates. Scoop on black beans, grab a handful of cabbage onion slaw, top with salsa, jalapeños , avocado , and anything else you want.

Eat.

Left over polenta is great to have in the fridge. Just store in an airtight canters for up to a week. Sear it or bake it up whenever you are in the need.
