Winter Squash, Beet, and Avocado Toast

I don’t know about you but this weekend I just want to keep things simple. And easy. (That applies to life and food.) And I’m pretty sure that I am not the only one.

Which brings me the toast, or fancy toast as some people call it. Simple in it’s own right of being a piece of bread cooked until lightly crunchy and toasty. Piled on with stuff, almost like a sandwich, but it left opened faced because, well just because. This particular piece toast is piled on with stuff is what I have been eating all week (roasted squash, beets and avocado) and am pretty sure is my new favorite food combination.

So for lunch, wanting to share my favorite flavors, I toasted a nice big piece of my homemade sourdough, grabbed the stuff (some people call left overs which you might have bunch of but I just call it ready to eat food) and made the mr a fantastic, beautiful, and delicious piece of goodness that we call toast.

The mr, well he was a little spectacle at first but one bite and he was in. Might just be his new favorite food combo too.

Gosh he is lucky I have such good taste. HA

Now to the Toast!!!

The stuff. A good add piece of bread. (or rolls, or baguette.. whatever you have). Also need mashed winter squash (I used mashed butternut and there is also sweet potato in there too). Roasted and sliced beet, 1/2 an avocado, a little red cabbage, salt and pepper, a splash of vinegar, and red pepper flakes.

How it’s done. Step 1. Toast bread to preferred toasted-ness. Step 2. Cover entire side (right to the edges) with mashed up winter squash. Step 3. Add on sliced roasted beet. Step 4. Layer on avocado then mash it up. Step 5. Add on shredded cabbage Step 6. Drizzle on vinegar and sprinkle with salt, pepper, and red pepper flakes.

Last step. EAT IT!

Winter Squash, Beet, and Avocado Toast

makes one great piece of toast

  • a few slices of roasted or steamed beet (cold or warm)

  • about 1/3 cup mashed winter squash and or sweet potato (cold or warm)

  • 1/2 an avocado

  • 1 big piece of good bread

  • salt and pepper

  • teaspoon red or white wine vinegar

  • a small little handful of shredded cabbage (optional)

  • red pepper flakes

Grab great bread and toast it to your preferred toastedness. Once toasted cover with mashed squash then add on the sliced beet. Now grab avocado, place on top of beets and mash with a fork, Top with shredded cabbage and drizzle the top with the vinegar. Sprinkle with salt, pepper, and red pepper flake.

Eat.

Hummus Bowl with Roasted Veggies

I eat so much hummus. Everyday, all day. Homemade, store bought. If there is hummus, I will be consuming it. But the thing is, I usually don’t eat more then a little at a time. (A little being like 1/2 a cup). And sure, sometimes that is just fine and enough, but other times, what I really want to do is garb a spoon and a bag of carrots and eat it all. And then I do.

But there is that little voice in the back of my head telling me that if someone where to catch me eating mounds of hummus, they would liken my eating behavior to that of someone eating a jar of mustard (Not going to lie, it happens sometimes) or of a bottle of ketchup (but I don’t eat ketchup) and that have a problem and shouldn’t being eating it like that. Because hummus, for some reason, has been put into the condiment category. It’s treated like a dip or a spread and that is fine and dandy to eat it as such, but hummus is so much more. It can, and should be treated more like a main component to a dish. So let us step outside of that box and eat it how we really want to eat it.

Hummus by the bowlful. I know right! It just makes so much sense to me. And now to you too. We need to stop stopping ourselves from just a scoop or two because really, that is just not enough. Nope, this is for real. A bowl, full of hummus, topped with roasted veggies because that is just more deliciousness. And we get to eat it all.

Life can be pretty great sometime, you know. HA

Now to the bowl of hummus!

The stuff. We got chickpeas, tahini, a lemon, red wine vinegar, garlic, salt and pepper. And Veggies. Brussel Sprouts, broccoli, onion, Swiss chard, and kale.

Chop up the broccoli, the onion and half or quarter the Brussel sprouts. And separately, chop up the kale and chard.

Toss the chopped Brussels, broccoli and onion into a baking sheet or oven safe skillet and season with salt and pepper. IF you want to toss in a little oil, go for it. Then pop the veggies into a hot oven to roast away.

Once the veggies are just about done to your liking, grab the chopped kale and chard and off to the veggies. Toss and roast for a few more minutes.

Done.

Hummus. Chickpeas with liquid, garlic, tahini, juice of lemon, and blend. Creamy smooth and delicious.

Dump that hummus into bowls.

And top with roasted veggies.

Would you look at that. Now all you need to to is dig in. Serve with extra lemon and black pepper. Grab your utensil of choice and eat.

Hummus Bowl with Roasted Veggies

makes 2 servings if eating as a meal

  • 3 cups cooked chickpeas in liquid

  • A lemon

  • 1 tablespoon red wine vinegar

  • 2-3 cloves garlic

  • 1/4 cup tahini

  • salt and pepper

  • 10 or so Brussel sprouts

  • A small head of broccoli

  • A small onion

  • 5-6 kale and or Swiss chard leaves

Note. Use whatever veggies you want. Fresh or already prepared. All and any leftovers would be great.

Preheat oven to 450.

Cut Brussel sprouts in half, chop the onion into small pieces, and cut up the broccoli and toss onto a baking sheet or an oven safe skillet. Sprinkle with a little salt and pepper and stick into the oven to roast for about 20 ish minutes or until nice and roasted. Feel free to toss the veggies in a little oil if you want. Chop up the kale and chard into smaller pieces. Once veggies are just a few minutes from being cooked to you liking, remove from oven, and toss in the greens. Cook for another 5 or so minutes until those are nice and wilted. Remove veggies from oven.

While veggies are roasting, make hummus. Place chick peas with liquid, the juice of the lemon, vinegar, garlic, and tahini into a food processor. Blend until smooth and creamy. Taste and season with salt and pepper to your liking. Dump into a bowls.

And when you have hummus make and veggies roasted, its time to compile. Dump the hummus into 2 bowls. Dump half of the roasted veggies into each bowl.. Squeeze more lemon juice onto both then grab a fork.

Eat. And yes, lick bowl clean. No shame.

Sweet Potato Cranberry Muffins and the (Before) Kitchen of the new house

I still can't believe that we bought a new house,  not even a week ago.  Like whoa holy crap!

And with any fantastic and great house that the mr and I would buy, this place needs a fair amount of work (a few walls down, a small addition to the upstairs, and new kitchen and bathrooms to start) But other then the small details of that, this place is a freaking gem. I am more then excited to get to it and start removing, ripping and tearing out the crap to unearth and enhance the beautiful old house to it's glory! Oh man is it going to be a long, fun filled, couple of months ahead of us!

So the day after we closed, we had a bunch of our family and friends come over to check out the place. Me being me, I needed to test out the new kitchen before we completely gut it and like any good hostess, I just had to make sure I had some snacky , good smelling, bakes treat for all the folks coming in and out of the place. So I made muffins. My initial thought was cookies, but I really didn’t want to have to hover over the stove and plus, I had a bunch of sweet potatoes and cranberries that needed using up (sound familiar, this is the muffin for you)

And bonus, the house filled up wit the sweet smell of baking. (That was my plan) and the muffins, they were a hit!

The kitchen!!! Isn’t it  so freaking ugly cute fantastic? Check those windows out. 

So back to the muffins. I was being practical and premixed up some of the stuff  and brought it over to the house. 

The stuff. A bowl of all purpose and whole wheat flour along with some salt, baking powder and soda, cinnamon and ginger. And a bowl of wet which has a a bakes sweet potato, oil, and brown sugar. And a cup of almond millk with a bit of vinegar mixed in and a jar of mostly  chopped up fresh cranberries

Mix the crap out of the wet until the mixture is mostly smooth. I used a plan old baked sweet potato  for this but feel free to use any left over seer potato  casserole you have laying around for this, just adjust spices if there are a bunch already in the potato.

Dump the wet mixture into the (already mixed up) dry mixture and mix along with the vinegar- almond milk until everything is just combined (don't over mix the batter!).

Grab cranberries and fold them into batter. Also can totally use up any cranberry situation you might have left over (maybe not the canned jello kind})

Batter into greased muffin tins and into the preheated oven they go.

More kitchen. Check out that dish washer, its pretty awesome. I am not going to keep it, but I don't want to trash it, its too freaking cool. So anyone want a dishwasher? (still work)  The fridge is new, but we are going to move it to storage and use it in one of our apartments eventually and get a new fringe.  The counters and the cabinets are getting donated and the fake brick background is staying. (HAHA) F no.. That’s coming down like today and unfortunately the super cute flower wallpaper has to come down with it. (I kinda wanted to keep it.. oh well)

 And the little window.. so my favorite part. I have never had me a nice kitchen window before.

The othe side of kitchen, where this amazing stove lives.  The stove works, but it’s a little rough. The door is slightly coming off and broiler pan is broken, but other then that, it works fine. I have even though I might try to fix it up and keep it. (the mr is not into that) We will see, but I think we are going to get a new one. (and donate this one). 

So kitchen tour is done Back to the muffins.

 Once they are all nice and golden brown and a tester comes out clean, these babies are done! Take out of oven and remove from pan and let cool on a rack.

The perfect snack for any occasion

Sweet Potato Cranberry Muffins

makes 12-14

  • 1 cup sweet potato puree
  • 3/4 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 3/4 cup brown sugar
  • 1/3 cup oil
  • 1cup almond (or whatever) milk
  • 1 tablespoon apple cider vinegar
  • 1 cup fresh chopped cranberries 

Note.. use any left over sweet potato stuff or cranberry sauces that you might have left over.. just adjust seasonings to taste.

Preheat oven to 350

Start by measuring out your almond  milk and adding in the tablespoon of apple cider vinegar. Set aside. In a large bowl whisk together the flours, baking soda and powder, the salt and the cinmoan and ginger. In a separate bowl, mix together the sugar, sweet potato, and the oil until well combined. Dump the wet into the dry and mix together along with the almond milk unit just combined (don't over mix!) Dump in chopped cranberries and fold them in. 

Grease a muffin pan and scoop equal amonts of batter into the tin and place into oven. Bake until golden brown and a tester comes clean from a muffin middle. 

Remove from oven and let cool on a rack

Eat.
