Summer Bounty with Lentils Salad

All at once is how it goes. The garden is all star fantastic and just won't quit.  I find myself picking 4-6 cucumbers and the same in squash every morning. The tomatoes plant are a freaking jungle and there are so so so many tomatoes, all just about to ripen. The kale is doing it's thing, growing big and green and I pick a few handfuls a day. And then there are all the beets and carrots and cabbage,chard, and kidney beans. It's big, and prolific and amazing. I am much proud of myself for growing a shit load of awesomeness.

And then there is the farm share. I get all my garden stuff times 10. Tomatoes, cucumbers, zucchini, kale. Not to mention the corn, onion, carrots, and herbs and all the flowers. The food keeps on coming.  I live in a house, with a big kitchen, with lots of counter and a full sized fridge, yet I still don't have a place for it all. The squash overflow has now made it's way to the dinning room. But I am not complaining.

The new rule that I have instated in the house. Every meal must contain at least two tomatoes, a cucumber, and some kale. Want a snack, grab a zucchini. You thirsty? well eat a cucumber. No joke. I get a little stressed out about how much food is around that needs to be eaten or canned, but that is good stress. I am on the lookout for a chest freezer to help with the stress. I promised myself that I would have one by now so I need to get on that asap.

Summer harvest. This is the time of year that I gain a few pounds. It's a zucchini tomato belly for sure.

And this salad. I am a huge fan of the B.A.S (big ass salad). A big ass bowl of all the goodness from farm and garden plus some lentil protein and a little good avocado fat. Fresh and clean and delicious. Makes you feel all good when you eat it.  So go for it. Eat yourself a B.A.S. you wont regret it.

The stuff. Cucumbers (that is a white cucumber and it's really tasty) tomatoes, some kale, parsley, and cilantro. Also need some onion, cooked lentils, and at least half an avocado. Salt. pepper, and red wine vinegar for the finish.

Kale. parsley, and cilantro get a good rough chop and then tossed into a big ass bowl.

Cucumber, onion, and tomatoes get their turn next and chopped into mouth sized pieces. Into the bowl as well.

Top it all with cooked lentil, some avocado, and a glug glug of vinegar. Season with salt and pepper.

Toss it all around.

Now all you need is a fork.

Summer Bounty with Lentils Salad

• 2 cucumbers
• 2 small or 1 large tomato
• 1/2 of an onion
• 1 cup cooked lentil
• 1/2 an avocado
• 3-4 large kale leaves
• handful fresh cilantro
• handful fresh parsley
• red wine vinegar
• salt and pepper

First off, grab a really big bowl. Take herbs and kale and chop into small pieces. Place in bowl. Next dice up you onion, tomato, and cucumbers into mouth sized pieces and toss those into bowl. Dump the cooked lentils on top of that and dice the avocado (I used half but you can use whole one) into little pieces and through that on too. Sprinkle with a pinch of salt and pepper and a glug (about a table spoon or two) of vinegar.

Now mix until all combines. Taste and if needed, add more salt, pepper, and/or vinegar.

Now its done. Grab a fork and eat to your face.

Sunday Happy

The world is bursting with green and every time I look up there is more and more of it. What can I say. It just makes this girl here really freaking happy.

It's been a super busy week. With all the nice weather comes the ability and need to get so much shit done. We practiced a little shou sugi ban and managed to not burn the house down.  Worked on the front porch, made some raised beds. The back porch was scraped, repainted and all sorts or jazzed up. I ended up pulling my neck late in the week so every move I made was pretty painful and I was walking around with an ice pack or hot water body plastered to my neck. Actually, I still am cause this shit still be hurting.(getting old is rough) Some littles came over and helped me plant some more seeds then we went to the park, played in the field and ran barefoot in the grass. Life is good when you don't need to wear shoes anymore.

Today the mr and I are running up north to pick up some more cedar. I am excited to take a little trip out of town, roll the windows down, play some good tunes, and see how the world is filling up with green. Road trip, hot water bottle on my neck, and coffee. It's going to be a good day.

Winooski House Update

House update.. Check it out! Our entire upstairs is wires, the plumbing is ran, (not hooked up to anything yet) and completely insulated. It's freaking sea foam green crazy up there. 

 Now the next big step up hear is sheetrock! That's going to be a bitch of a week, but for the mean timewe have left the upstairs alone because we are waiting to get a rough inspection from the city. And so we get to enjoy the green for just a bit longer.

For now we have ventured back down stairs. A few unseen things have been done likethe re- supportingof the floor with beams in the basement and running all the water lines and elecrrical from upstairs to the basement. We started tackling the clean up of the windows, there has beenlots of sheetrock patching and mudding and adding in light switched and outlets to all the boxes. And recently we have decided that we are going to either rip up the wide softwood downstairs and patch in oak or, if we cant find the right flooring to match, we are going to re-floor the entire downstairs, you know, just to make things a little harder on ourselves.

So yeah, this is where we are at. It's all smooth sailing from here!

Happy Bits

Oh do I love a good Sunday. The picture above was taken last Sunday and what a glorious day that was. The mister and I took the pup hiking and it was the most spectacular of days. Sunny, 30 degrees and no wind..I could't have asked for better weather.  

The rest of the week turned out alright. The weather went back to hell again and I was a little frantic and super busy, but all in all, good. I accomplished some things  that needed to be done and got to spend time with just about everyone in my family. The highlight was when my sister slept over and we finally watched the Fault in our Stars while eating lots of food, cuddled together on the couch. (movie was good, but book was better. Books are always better) We then woke up early the next day and we (the mister too)  journeyed across state lines to the closest Target where we purchased some hand soap,  2 seltzer waters and 2 jars of baby food. (I needed the jars) On our way out, the lady experienced her first ever taco from the taco bell in the food court before heading back to Vt. We spent the car ride singing terrible pop songs and eating the babyhood (Blueberries and sweet potato, and yes, they are tasty) We then came back tom my house, listened to more awesome music while she did her homework and I played on the computer and made dinner.  It was the best.

Playing on the frozen lake. It was so freaking cold and windy, but we just had to do it!

My little brothers (can I say little if they are bigger then me?) came over and we all had dinner together while listening to music from when they were born. Nothing like a few 17 year olds to make a person feel old.

Bits of Happy

 I spent a lot of time indoors this week, due to the fact that my eyelids would freeze shut when going out for more than a few minute..(for real, walking to the gym the other day, I had my head tightly wrapped and the condensation from my breath went up, into my eyes, and froze.)  I mean, I love winter, I love the cold, but I am not a huge fan of -30 with wind chill… I get cold bones.  After that morning, the mister insisted on diving me…Love. So we (me, Nick, and especially Washer) might have felt a little trapped this week, and when trapped inside, we get a little antsy, but we have been trying to make the most of it. Cooking, baking, cleaning, drawing, reading, knitting, drinking lots of coffee and tea, and overall trying to stay warm (and sane) Yup. trying to ward of the cabin fever, especially this year, living in a little tiny bit of a room with one window..has been a little difficult. And I know it's going to be a bitch when it hits. But it's all cool, We have plans in the making, places to look forward to, things to see. It always helps to have an adventure awaiting to keep the fever at bay.

Anyway, not a bad week, maybe a little stuffy, but nothing to complain to much about. Here are a few of highlights that made(make) me happy.

The kitchen, living room, dinning room, office…all over great room., covered in piles of clothes. Sometimes listening to music and folding laundry can be so, I don't know, peaceful. I just felt happy at this moment. (might be the fact that I know have some clean clothes and dish cloths)

  

The trash dog and I went for a lovely little hike by ourselves…It was so nice to get out of the house. We both really really really needed it that day. And look how handsome he looks.. so red against the world. 

 Standing in line at the grocery store, saw this magazine and started to laugh. I love Oprah...but now…I really love Oprah. Best magazine cover ever!

  I am doing little recipe testing and this situation in this pot is so freaking good! Just trying to work out a  few technical kinks.

I made a large quantity of banana dream (what I call banana ice cream). This stuff is like crack.. Once I start eating it, I can't stop. I might overdose on bananas but I am ok with that. 

 

I went to a granite and marble showroom this week. And like whoa, so freaking cool. Walking among huge pieces  of gorgeous slabs of stone is kind of magical… and a little cold.

A basket of roots….More like a basket of rainbows. 

 

I currently don't have a pretty vase of zinnias on my table, (these beauts are from this past summer) but I really wish I did. Fresh flowers are one of my favorite  things. This picture has inspired me, I am on the hunt for some pretty fresh.
